Roasted Cauliflower Rice
If you are eating low-carb, roasted cauliflower rice is a healthy alternative to grains. Chopped or grated to the rice-resembling consistency it could be used as a base for curries, stews, stir fries, or any other dish you would eat with rice.

You'll need
1 medium head cauliflower, cut into florets
1 teaspoon turmeric powder
Sea salt to taste
1 tablespoon olive oil
Directions
STEP1
Preheat oven to 200C/400F. Line a rimmed baking sheet with parchment paper.
STEP2
Place the cauliflower florets in a food processor. Pulse until you get the texture of rice or couscous.
STEP3
Pour the riced cauliflower onto prepared baking sheet. Sprinkle with turmeric, season to taste and drizzle with olive oil. Mix well and then spread out in a single layer.
STEP4
Roast for about 15 minutes, mixing once or twice during cooking.
