You'll need

1 medium zucchini, sliced
4 x 175 g white fish fillets such as cod or hake
1 teaspoon Herbes de Provence
2 bell peppers, halved and finely sliced
12 cherry tomatoes, halved
12 Kalamata olives, pitted
1 tablespoon capers, rinsed
Olive oil, to drizzle


Preheat oven to 200C/400F. Cut out 4 large sheets of parchment paper.

Place zucchini slices on a middle of each paper sheet. Put a fish fillet on top. Sprinkle with salt, pepper and dried herbs. Add the bell peppers, olives and capers. Drizzle with olive oil. Wrap and secure each parcel tightly.

Put the fish parcels on a large baking sheet and bake for 20-25 minutes. Bring to table and cut a cross in the center of the parchment to open the parcels.
