You'll need

500 g fresh strawberries, hulled and cut into bite-size pieces
300 g rhubarb, trimmed and cut into 1 cm cubes
2 tablespoons Cointreau or orange juice
2 tablespoons Swerve sweetener
1 teaspoon freshly grated ginger
1/2 teaspoon vanilla powder
2/3 cup Crunchy Coconut Keto Granola

Directions

STEP1
Heat the oven to 180C/360F.

STEP2
In a large bowl, mix all the ingredients except granola. Stir well and let marinate for about 10 minutes.

STEP3
Place the mixture into a ceramic baking dish. Bake for about 30-40 minutes until bubbling.

STEP4
Remove from oven and let cool slightly. Sprinkle crunchy granola over and serve with dollop of Greek yogurt or ice cream.
