Soda bread is a quick bread traditionally made with baking soda, which is used as a leavening agent instead of yeast. It’s simplest bread I’ve ever baked. I even made it on the trail. The classic recipe requires only few ingredients: flour, baking soda, salt, and buttermilk. With a task to make a healthier version of it, I’ve made some changes. The ordinary flour I replaced for the whole-wheat flour and have added a mix of seeds for an extra texture. And a bit of honey perfectly complements the nuttiness of the brown flour.
Low Carb Seafood Pizza
As you already understood, on keto we do not give up our favorite dishes from the “past life”. We simply remake them in a new way. This low carb seafood pizza is just that case.
You can use the dough recipe for making rolls, as well as closed and open pies.

For the dough:
170 g semi-firm Mozzarella cheese, grated
85 g almond flour
2 tbsp cream cheese
1/2 tsp baking powder
For the topping:
1/3 cup passata (diced tomatoes in their own juice, sugar free)
1 tbsp XtraVirgin Olive Oil
1 tsp dried oregano
Salt to taste
1/2 cup grated Cheddar cheese
300 g seafood mix (mini-octopuses, squids, shrimps, mussels), previously thawed
1 tsp capers
Preheat oven to 200C / 400F.
In a deep, heat-resistant bowl, combine mozzarella, almond flour, cream cheese and salt. Microwave at maximum for about 1 minute. Then mix well and place in the microwave again for 30 seconds. If you don’t have a microwave, you can melt the cheese on the stove, but always in a water bath. Add the egg and baking powder to the melted cheese. Stir thoroughly with a silicone spatula (because the dough is still hot). Allow to cool slightly so that you can take it by hand, and form a ball from the dough.
Put a sheet of baking paper on the table. Its size should match the size of your baking sheet. Put a ball of dough on paper. Top with another sheet of baking paper. Now take a rolling pin and carefully roll out the dough, forming the basis for pizza. The thickness of the base for pizza should be approximately 5-7 mm. Remove the top sheet of paper, you will no longer need it. And lower, along with the base for pizza, shift on a baking sheet. Place in the oven and bake for 10 minutes until lightly browned.
In a small bowl, mix the passata, olive oil, oregano and salt. Place tomato sauce on the pizza base and spread evenly. Sprinkle with half the Cheddar cheese and randomly pour the remaining ingredients. Top with some cheese . Put the pizza in the oven and bake for another 5-10 minutes.
Before slicing pizza into portions, let it cool slightly.
